Pumpkin Pancakes

It's the fall season and that means baking season has also officially begun!! Here is a recipe for some delicious, fluffy pumpkin (chocolate chip) pancakes that you're just going to love!

Ingredients line up:

2 cups wheat flour
1 T baking powder
1/4 tsp salt
1 1/2 tsp pumpkin pie spice
1/4 - 1/2 cup white sugar (depending on what your taste buds want)
2 eggs
1 1/2 evaporated milk (1 - 12 oz can) ((or can use milk))
1 T olive oil
1/4 cup pure maple syrup
1 cup pure canned pumpkin purée
Optional chocolate chips
Cooking spray, or butter to keep the cakes from sticking



Directions:

Whisk together the dry ingredients in a large/medium bowl.

Then in a separate bowl, whisk together the eggs first, followed by the remaining wet ingredients.

Combine wet and dry into one bowl. Add in desired amount of chocolate chips. Add more cinnamon/whatever spiced you'd like, if needed.

Scoop batter in onto skillet that's been heated up to MEDIUM HEAT. Wait until you see a few bubbles, then flip.

I tried a pumpkin pancake recipe last year, I'll have to give this one a try! Soo yummy with cinnamon syrup!
