Banananana Muffins

You know that time when you notice you have a bunch of aging bananas sitting on your counter and you realize that they're not getting any younger? I had this very realization last night.. 4 aging bananas were begging me to be used. So this morning I made banana muffins! I found this particular recipe online and was interested in it because it uses THREE bananas in the recipe as opposed to one and a half or 2 in every other banana muffin recipe ive used in the past.

The results were delicious.....

Seriously, the muffins were so moist I couldn't believe it. Make them. Make them TODAY.. Or just the next time you have old aged bananas :)

Recipe:

1 1/2 c. Flour
3/4 c. Sugar
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Cinnamon
Dash of Salt
3 Bananas
1 Egg
1 tsp Vanilla
1/3 c. Vegetable Oil or Applesauce

For the Streussel Topping:

1/3 c. Brown Sugar
2 T. Flour
1/8 tsp Cinnamon
1 T Butter (cold.. Blended in with your fingers)

**Oven at 375• @ 17-20 minutes

Mix the dry and wet separately then combine. May use brown or white sugar or a combination for the dry mix, as well as white or wheat flour.
